Back in the Sengoku period (known for constant civil wars), Samurai used to drink Nerizake to energize them before the battle. In modern days, people enjoy this sake to celebrate special occasions. The sweet-and-sour flavor comes from probiotics (lactic acid bacterium) that is produced from two levels of fermentation. Compared to regular sake, Edo Nerizake is low in alcohol and has a white color with a smooth and thick texture.
